Step 1
Mark as Complete

Finely chop your red bell pepper, green onion, cilantro, and jalapeño pepper. Cut a mango in half, and use this half to dice. Put these ingredients into a small bowl, add your lime juice, and lemon juice. Give a good stir and your mango salsa is complete. For the baja sauce, just add all of the ingredients (above) together in a separate dish. Stir and mix well. You will have plenty of sauce left over to store for later use.

Step 2
Mark as Complete

Spray your mahi mahi fillet with butter cooking spray and season with Zatarain's blackened seasoning on both sides. Steam 4-6 minutes. Afterwards, chop your mahi mahi fillet into bite sized pieces.

Step 3
Mark as Complete

Evenly distribute the mango salsa and chopped mahi mahi over your tortillas.

Step 4
Mark as Complete

Get a ziploc bag and cut a little corner off. Make the slit big enough where you'll be able to squeeze the baja sauce out. Put 2 tablespoons of baja sauce in the ziploc bag and distribute evenly over your tacos. Trust us--2 tablespoons is plenty. Store the remaining sauce in your refrigerator (for up to 1 month).
