This Blueberry Mug Cake recipe is exactly what you’ve been looking for to satisfy your sweet tooth. It’s portioned just right and completely microwavable, so no need to heat up your entire oven. Now you won’t have to bake an entire cake, because we all know that you’ll end up eating more than you’re supposed to. Come on, we all do it. So how do we make a microwaveable cake that tastes just as delicious as a baked one? The secret ingredient—meringue powder. Time to turn up in the kitchen!
This step is a little tricky and super critical. For starters, your microwave will need to have a setting where you can adjust the power level. The plate inside will also need to rotate when powered on. If your microwave does not have both of these features, then it’s time to upgrade. Adjust your microwave power setting to 7 and place your mug on the edge of the rotating plate. Do not place the mug directly in the middle! We want the mug to rotate around from front to back. Set the cook time to 1 minute 30 seconds. One thing we don’t want to do is overcook the cake. If your cake comes out overcooked, you may need to lower your microwave power setting to 6. You’ll know that it’s overcooked if your cake comes out hard. It’s ok. Just try again and adjust accordingly.
What good is cake without frosting? Add 3 tablespoons of Cool Whip Lite and 1 teaspoon of Jell-O vanilla instant pudding mix into a bowl. Give it a good stir and you’re good to go.
