5oz chicken breast
1/2 cup Velveeta shreds (cheddar)
2 tablespoon corn
2 tablespoon (diced) red bell pepper
2 fat free tortilla
1/4 teaspoon poultry seasoning
1/8 teaspoon cayenne pepper
1/8 teaspoon white pepper
1/8 teaspoon onion powder
1 tablespoon garlic powder
Here’s for the next time you need a quick fix to hold you over. The chicken seasoning blend for this recipe is what sets it over the top. There’s nothing complicated about a good ole’ fashioned quesadilla. We don’t possibly see how you can mess this one up. By the way, the nutrition information below is for two chicken quesadillas. Split in half if you’re only making one. Let’s get this little fiesta started!
Heat your stove top heating surface to medium, and spray your pan with canola oil cooking spray. Combine your poultry seasoning, cayenne pepper, white pepper, onion powder, and garlic powder in a small container. Give it a good swirl and shake to blend well. Use this seasoning blend to sprinkle over both sides of the chicken. Cook chicken breasts for about 10 minutes, flipping every 2 minutes. Cut the chicken into bite sized pieces and place to the side. Make sure the chicken breasts you get at the grocery store are thin. Thicker cuts will cause for a longer cook time.
Spray a little more canola oil cooking spray and place your tortilla in the pan. Immediately add your cheese, corn, chopped red bell pepper, and chicken to one side. The other half of the tortilla should be empty. Fold this half over and cook for 1-2 minutes. Flip and cook for another 1-2 minutes. Watch carefully so you don't burn your quesadillas. You have to be very quick!
Cut your quesadilla into three wedges. Use a pizza cutter to make it easier.
