Ice Cube Cheesecake
Delicious bite size desserts in an ice cube tray
I always carry a knife with me at all times. You know, in case of cheesecake or something.
5 cinnamon graham cracker sheetsHoney Maid
1/2 cup marscaponeSainsburys
1 cup whipped creamed cheesePhiladelphia whipped cream cheese
1/2 cup powdered sugarSwerve
2 teaspoons vanilla extract
In a blender or food processor, pulse the graham crackers until fine. Add the water and combine until fully mixed. Set aside and wipe down blender, then add cream cheese, mascarpone, sugar and vanilla. Blend until smooth.
Place one blueberry into the bottom of each cube in a silicone ice cube tray.
Pipe or spoon the cheesecake mixture over the blueberries, leaving a gap at the top for the graham cracker layer. Freeze for 1 hour or until firm.
When the cheesecake has set, spoon the graham cracker mixture on top and pat down with the back of a spoon. Freeze for 1 hour, then pop out your cheesecake bites. Leave at room temperature for 1 hour then chill until ready.
