The added touch of lime gives this omelette a nice little tang to each bite. Pair this omelette with hash browns or toast, and you’ll still come under 599 calories.

Drop the egg beaters and baby spinach into your blender. Squeeze half of a fresh lime and pulse blender 3-5 times. We said "pulse", not blend!

Heat a cooking surface on your stovetop to medium heat, and use canola oil cooking spray for your pan. Pour the egg/spinach mixture from your blender into the pan. Add your cheese, peas, a pinch of salt and pepper if desired.

You should be able to fold over the omelette by now. If the egg is still a little runny, let it cook for a minute longer and try folding again. Use a spatula to fold and your omelette will come out sexy every time. Turn the heating surface off and let the omelette remain in the pan for 1-2 minutes.
