Spray a microwave safe mug with canola oil cooking spray. In a separate bowl mix together your cake mix, applesauce, water, and meringue powder. The meringue powder is truly the secret ingredient. Pour into your microwave safe mug.
This step is a little tricky and super critical. For starters, your microwave will need to have a setting where you can adjust the power level. The plate inside will also need to rotate when powered on. If your microwave does not have both of these features, then it’s time to upgrade. Adjust your microwave power setting to 7 and place your mug on the edge of the rotating plate. Do not place the mug directly in the middle! You want the mug to rotate around from front to back. Set the cook time to 1 minute 30 seconds. One thing you don’t want to do is overcook the cake. If your cake comes out overcooked, you may need to lower your microwave power setting to 6. You’ll know that it’s overcooked if your cake comes out hard. It’s ok. Just try again and adjust accordingly.
What good is cake without frosting? Add 3 tablespoons of Cool Whip Lite and 1 teaspoon of Jell-O vanilla instant pudding mix into a bowl. Give it a good stir and you’re good to go.
