Have you noticed that restaurants are “trying” to offer healthier meal options (if that’s what you wanna call it) when you dine out? Why is it that the only options available are grilled chicken, fish, or salad (and sometimes the salads are just as unhealthy as a burger). We want pasta, dammit! After a lot (and I mean a lot) of research and development, we have come up with a guilt free pasta recipe for everyone to indulge in without tipping the scale. It’s super easy and doesn’t involve much effort at all. You just basically drop your ingredients in and let it do its magic.

Cook 1 1/3 cup of pasta per the instructions on the box and set to the side.

You'll need a cast iron skillet for this recipe, and make sure you get a relatively small one. 8 inches is the perfect size. Heat your cooking surface to medium, spray with olive oil cooking spray and sauté your onions for a few minutes.

Add the rest of your ingredients to your skillet (except for the pasta) and simmer for 25 minutes. Make sure that you stir occasionally. When 10 minutes remain, preheat your oven to 350°.

Add your pasta to the sauce, mix well, and add your Velveeta cheese shreds on top. Place the entire skillet in the oven and bake for 5-8 minutes or until the cheese has melted.

Let cool for about 3 minutes. I like to eat mine right out of the skillet. If you do the same, be extra careful not to touch the cast iron skillet. It will remain extremely hot for a while.
