Red Velvet Cake (Microwaveable)

This recipe is portioned just right and completely microwavable, so no need to heat up your entire oven.
6 tablespoon Betty Crocker red velvet cake mix
1/2 tablespoon unsweetened applesauce
1 teaspoon meringue powder
1 1/2 tablespoon water
3 tablespoon Cool Whip lite
1 teaspoon Jell-O instant vanilla pudding
Now you’re probably wondering how a cake can be guilt free. Let us explain. When you buy cake mix at the store, what normally ends up happening? You bake your cake, add loads of frosting, go back for thirds, and end up over indulging. Don’t be ashamed because we’re guilty too. We have no control at all when it comes to sweets. It’s a struggle every single day and there’s just no resolution to the problem in the near future. You just kinda have to deal with it. This recipe is portioned just right and completely microwavable, so no need to heat up your entire oven. The secret ingredient? Meringue powder. Let’s get it crackin’!
Spray a microwave safe mug with canola oil cooking spray. Add your cake mix, applesauce, water, meringue powder, and stir.
This step is a little tricky and super critical. For starters, your microwave will need to have a setting where you can adjust the power level. The plate inside will also need to rotate when powered on. If your microwave does not have both of these features, then it’s time to upgrade. Adjust your microwave power setting to 7 and place your mug on the edge of the rotating plate. Do not place the mug directly in the middle! We want the mug to rotate around from front to back. Set the cook time to 1 minute 30 seconds. One thing we don’t want to do is overcook the cake. If your cake comes out overcooked, you may need to lower your microwave power setting to 6. You’ll know that it’s overcooked if your cake comes out hard. It’s ok. Just try again and adjust accordingly.
What good is cake without frosting? Add 3 tablespoons of Cool Whip Lite and 1 teaspoon of Jell-O vanilla instant pudding mix into a bowl. Give it a good stir and you’re good to go.
