Sheet Pan Shrimp Tacos

Easy cleanup one sheet pan dinner

No matter how bad your day was, just remember, someone out there has to clean the bathrooms at Taco Bell.

Line baking sheet with parchment paper for easy cleanup. Place mixed peppers, onion, and chopped red chili on sheet.

Pour & sprinkle canola oil, salt, cumin, smoked paprika, chili powder, and garlic powder over vegetables. Toss to evenly coat. Bake 20 minutes 400°F.

Step 3

After the vegetables have baked, add shrimp to one side of the sheet pan. Squeeze the juice of one lime over the shrimp and sprinkle salt. Push over the vegetables to the middle of the pan and place 4 tortillas on the left side of the sheet pan. Bake 5 minutes 400°F.

Avocado filling: mix together one chopped avocado, coriander, lime juice, and salt.
