Frittatas are egg-based Italian dishes similar to an omelette or crustless quiche, enriched with additional ingredients such as meats, cheeses, vegetables or pasta. This Southwestern Frittata recipe is very easy to make and the portion size is massive! You’ll need a cast iron skillet for this one, and make sure you get a relatively small one. 8 inches is the perfect size for this recipe. This Southwestern Frittata will surely get your morning #turntup.

Pour the egg beaters into your cast iron skillet, and cook on medium heat for about 5 minutes. While this is cooking, set your oven to the broil setting.

Add the rest of your ingredients on top of the precooked eggbeaters mixture, and place the entire cast iron skillet inside the oven. Cook for 5-8 minutes. The mixture will bubble up in the oven, but don't worry.

Once your frittata has finished cooking, let it cool for about 3 minutes. I like to eat mine right out of the skillet. If you do the same, be extra careful not to touch the cast iron skillet. It will remain extremely hot for a while.
