Triple Chocolate Lava Mug Cake
Microwaveable molten chocolate cake
A toast to all chocoholics.
6 tbsp Betty Crocker triple chocolate cake mix
1/2 tbsp unsweetened applesauce
1 tsp meringue powder
1 1/2 tbsp water
3 tbsp Snack Pack chocolate fudge pudding
Spray a microwave safe mug with canola oil cooking spray. Add your cake mix, applesauce, water, meringue powder, and stir. The meringue powder is truly the secret ingredient.
The cake batter should be thick enough where you can kinda dig a hole. It's a little tricky, but you'll get it after a couple of tries. Drop in the chocolate fudge pudding and you're good to go.
This step is a little tricky and super critical. For starters, your microwave will need to have a setting where you can adjust the power level. The plate inside will also need to rotate when powered on. If your microwave does not have both of these features, then it's time to upgrade. Adjust your microwave power setting to 7 and place your mug on the edge of the rotating plate. Do not place the mug directly in the middle! We want the mug to rotate around from front to back. Set the cook time to 1 minute 30 seconds. One thing we don't want to do is overcook the cake. If your cake comes out overcooked, you may need to lower your microwave power setting to 6. You'll know that it's overcooked if your cake comes out hard. It's ok. Just try again and adjust accordingly.
Here's how to get fancy if you want to. Cook the cake by itself, excluding the chocolate fudge pudding. Heat the pudding in a separate dish after you have cooked your cake. Dig out a small hole from the top of the cake and fill the inside with the warm chocolate pudding. Place the piece of cut cake over where you just filled with chocolate fudge pudding, and serve.
