6oz grilled chicken breast
2 pineapple rings
1/4 cup mango (diced)
1/4 cup red bell pepper (sliced)
1/4 cup sweet corn
3 cups romaine lettuce
3 tablespoon Kraft mango chipotle dressing
Are you tired of making the same old funky salad? Stop being boring and step up your saladgame. Take a step into paradise with this sensational chicken salad that is packed with all kinds of tropical goodness and protein. As always, this salad recipe is totally guilt free. The pineapple gives the salad a nice touch of tang and sweetness to satisfy your tastebuds. This salad is beyond boring, so go ahead and give it a try.
Start off by cutting your red bell pepper and mango into bite-sized pieces. If you're using frozen corn kernels, zap them in the microwave for 10-15 seconds.
Heat your stove top heating surface to medium, and spray your pan with canola oil cooking spray. Start off by grilling your pineapple rings for 2-3 minutes and place to the side. Cook chicken breasts for about 10-12 minutes, flipping occasionally. Cut the chicken into bite-sized pieces and place to the side.
Place your romaine lettuce in a bowl and top with sweet corn, red bell peppers, mango chunks, pineapple rings, and chicken.
Pour mango chipotle dressing on top and take a step into tropical paradise.
If you like every inch of lettuce to be covered in dressing, put your lettuce and dressing in a large plastic container with lid. Give it a good shake to evenly coat every piece of lettuce, then transfer to your bowl. 3 tablespoons of dressing is plenty for this recipe. Trust us!
